Most people are shocked by the amount I eat in a day. And yet I have taken off almost 300 lbs! Everything I eat is carefully chosen for its nutrient content: Greens for fiber, minerals, and phytonutrients. They are the least calories and the most nutrition of any food. Beans with all their protein, fiber, beta glucan, anti-oxidants, and blood sugar regulating, micro-biome feeding resistant starch goodness. Garlic and onions to reduce cholesterol, kill cancer, and be anti-fungal and anti-viral. Tomatoes for lycopene and carrots for beta carotene…flaxseeds for lignans and cancer fighting properties. You get the picture! I eat for fuel not for fun, but luckily, my food is fresh and delicious and let’s me eat like a queen while I take off all the weight.

My name is Heather and I’m from Portland, Oregon. I am eating a plant-based, whole foods, unprocessed diet, with no sugar, flour or alcohol and low salt, to take off weight and regain my life.
